I take a small piece, drop it gently into water… If it floats… your fermentation has worked beautifully: – gluten web is strong, – gas is well-trapped, – dough is light and airy inside. If it sinks, don’t worry — it just needs more time in bulk. Let the microbes finish their work before you shape. 🫙 It’s one of my favourit
